The chef acclaimed for opening Fino and Quo Vadis under Sam and Eddie Hart has been appointed to head up the kitchen at Quaglino’s. Jean-Philippe Patruno took over from Darron Bunn this March, joining from Quo Vadis, where he was executive head chef from 2008 until December last year.

Before working with the Hart brothers Jean-Philippe trained under Nico Ladenis at his three Michelin-starred restaurant Chez Nico on Park Lane. He later worked as sous chef at Very Simply Nico in Victoria, working his way up to head chef at restaurant Nico Central. While there he was responsible for opening all new Simply Nico restaurants and worked under Nico for a total of six years.

Born in Marseille, Jean-Philippe brings his wealth of experience in both French and Spanish cuisine to the Mayfair institution.
