Achieving “sustainability” across our 20 London restaurants may seem a lofty goal, but we realised a while ago that it’s all about looking at what we’re doing in a new light.

Sustainability

We believe that if you’re not doing something right, change it, so across the business we have taken action, from joining the Sustainable Restaurant Association (SRA) back in 2009 to buying more energy efficient ovens. Transparency is important and by Christmas 2011 all 20 of the D&D London restaurants will have been assessed and achieved a sustainability rating from the SRA.

Good food

Good food is integral to our business and we have longstanding relationships with many of our suppliers. Exceptional animal welfare is a priority, as are certain criteria such as food that is GM-free, natural and as British as we can reasonably ensure. We have also signed up to the Sustainable Fish City campaign run by Sustain, which aims to get London businesses adopting a sustainable fish policy by the 2012 Olympic and Paralympic Games.

Pride in what we do

Like our people, each of D&D’s global restaurants is very individual, and chefs have the freedom and flexibility to seek out unique, seasonal produce. A sense of pride and ownership is positively encouraged in each of our businesses and, as such, we run a number of industry-renowned training programmes to promote staff development.
