The Royal Exchange Grand Café and Bar's new head chef Oliver Prince brings his passion and enthusiasm of cooking with seasonal ingredients to create simple, tasty, skilful and well balanced dishes. Oliver Prince's repertoire combines old Café favourites together with a selection of his own, perhaps a Chicken Club, Shellfish cocktail, a chilled Gazpacho or Eggs Benedict to name but a few.
