Let us introduce you to some of the key players in the newest addition to our collection.
Kim’s wicked sense of humour and professionalism is the first thing that you’ll notice when you walk through the doors of 14 Hills. With a background at The Savoy, Gordon Ramsay and Harvey Nichols he definitely doesn’t disappoint. He joined D&D London back in 2006 at Skylon, and has recently helped open 20 Stories, our first venture in Manchester. He has also worked at Plateau, Le Pont de la Tour and Aster.
Kim will be making sure that 14 Hills is the words on everybody’s lips for a long time to come. Kim thrives off the buzz of a busy restaurant, but in his spare time he likes to see his children and go out to eat and drink to keep up with trends at other venues in the city.
Cool fact: when he was younger, Kim was skilled in taekwondo, bowling and even ice skating!
Piat’s menu will focus on modern British cooking with a touch of French flair with dishes influenced by his life and cooking experience in France. Signature dishes will include a sharing dish of venison: Roast saddle, venison pie, venison bone marrow, long pepper & whisky sauce (£42); and a seafood starter of White crab, cauliflower, and oscietra caviar (£14.50). Classic dishes such as beef tartare, Jersey rock oysters, and Beef Rossini will also feature, as well as a dedicated grill menu of Aberdeen ribeye, Hereford fillet and Dover Sole served on the bone.
Massimiliano (aka Max) first came to London back in 2008, where he worked in bars until 2011. He joined the Dorchester collection with Chef Wolfgang Puck at CUT 45 Park Lane. He then joined D&D London in 2013 at Le Pont de la Tour. He also helped open Aster, then headed back to Le Pont to become Restaurant Manager, and he has most recently helped open Queensyard in New York.
Max is excited to help train and develop talented professionals, but also helping to promote an environmental friendly hospitality business. When Max isn’t at work he likes to play golf and take up daddy duties with his new baby.
Elise previously worked at La Dame de Pic at the Four Seasons, and before that the two Michelin-starred Gidleigh Park in Devon as Assistant Head Sommelier. Elise spent two years travelling in Australia, where she occupied a few food and drink roles in Sydney, as well as other positions in restaurants and hotels (and even farming of course!).
Her first official sommelier job was at Le Pont de la Tour, where she worked for two and a half years and worked her way up from commis sommelier, to Assistant Head Sommelier after their refurbishment.
Elise has created her own wine list at 14 Hills, and is aiming to promote diversity, sustainability and family owned wineries, especially those that hero female winemakers and owners. The wines she has chosen have been selected to cater for a classic palate, as well as a younger palate like her own.
In her spare time Elise likes to attend wine tastings and dinners and also likes to swim!
Leandro has joined 14 Hills from our neighbours at Sky Garden. Before that he worked in three different Michelin-starred restaurants alongside chefs Arnoud Bignon, Shaun Rankin and Gordon Ramsay in Mayfair.
Leandro is excited to bring his unique cocktails to 14 Hills. Expect bold concepts, big flavours and a lot of fun combined with refined flair.
In his spare time, you can find him eating and drinking his way around London’s finest bars and restaurants or trotting around the globe.
