Matt started his career as an apprenticeship with Michelin-starred chef, Gary Rhodes, he then moved across to work at Le Pont de la Tour before travelling to France, Austria and Swiztlerand to gain experience in three different Michelin-stared restaurants.
Also on Matt’s Michelin-starred repertoire are Zafferano, Green House, Gordan Ramsey’s restaurant in Japan and Maze where he worked with Jason Atherton for three years.
He then opened a restaurant alongside Jason in Hong Kong, 22 Ships, which won restaurant of the year, before he returned back to England with his young family.
Matt travelled to Mexico to undertake work experience in Pujol (11th best restaurant in the world) in January 2017 where he spent six weeks cooking at the best restaurants in Mexico, whilst learning about their cuisine and culture.
Matt is now Head Chef for Butlers Wharf Chop House.
